Azienda Agricola COS was founded in 1980 by Giambattista Cilia, Cirino Strano and Giusto Occhipinti. Three friends who wanted to retrace what had once been the activity of their ancestors. The acronym of their surnames (Cilia-Occhipinti-Strano) gives rise to the name of the Company, still today a Simple Company that at the time of establishment represented one of the youngest wineries in Sicily, a land of great wines, and Italy. In 1980, Giuseppe Cilia, Titta’s father, rented the old family winery and the adjacent small tree vineyard of 3.60 hectares, in the historic town of Bastonaca. On October 5, they harvested the first vintage that led to the production of 1,470 bottles. Thus began the history of the Cos winery; an adventure that will lead to a radical restructuring of the Sicilian wine scene. Today Cos is synonymous with "Cerasuolo di Vittoria" but also with many other wines to discover and enjoy. The Winery is also synonymous with rigour and quality. This company, born from the intuition of three friends, was responsible for the rebirth of the Vittoria area and its extraordinary wines.All the wines of Cos winery are born from the exclusive selection of grapes of property, harvested in two stages in order to obtain the maximum result and structural balance deriving from differentiated ripening. Soft pressing, fermentation controlled by a preset thermoregulation system, aging in barrique and a lot of passion and tradition.A peculiar characteristic of the winery concerns the geological particularities of the soil, which is well suited to the production of Moscato, Nero D'avola, Grecanico and many other grapes. The particular characteristics of the soil concern the average overall consistency that allows the easy penetration of the roots towards the bottom, the origin from sub Apennine sands of Pliocene origin and of a calcareous and siliceous nature interspersed with layers of fresh and compact clay, and limestone tuffs. Combination that allows an optimal retention of moisture in dry periods and on the contrary allows to drain very quickly in the most humid and cold periods, avoiding most of the problems due to frost and excessive exposure to moisture.
