The cellar Cave du Vin Blanc is located in Morgex in Aosta Valley and it born in 1983 from the “Association des Viticulteurs” with the aim to develop the vine culture of the Aosta Valley and to let know their products to a more extended public. The cultivation areas are between Morgex and La Salle, and the vineyards reach the 1200 m in highness and they are the highest in Europe.
The particular climatic conditions permits not to have parasitic illnesses for this reason the treatment are reduced compared to the traditional wine-growers areas. Even the phylloxera that, at the end of the XIX century, destroyed most of the vineyards all around Europe, did not resisted to the altitude; in fact in this vineyards there are cultivated the original vines without any graft. In this vineyards is produced, almost exclusively, the Priè Blanc de Morgex Et de la Salle a particular vine which managed to adapt itself in this climatic conditions; it has its vegetative cycle in a very reduced period, with a late bud, to avoid the last frost and freeze and so to achieve the maturation before, compared to other vines, by anticipating the snow arrival. In 2008 it has been inaugurated the experimental laboratory in high-flying in accord with the Courmayeur guides of the Alpes. The experimental phase is for checking the influence of the altitude in the sparkling wine production phase. The cellar located at the refuge Franco Monzino at 2590 m is the highest in Europe, the wine is bring by an helicopter, whereas the yeast, not to suffer for jump of temperatures are bring by foot by the guides, follows 18 months of re-fermentation in bottles and finally there is the disgorging at the feet of the Brouillard glacier.
Another very good product of the cellar is the Chaudelune Vin de Glace which has its grape harvest by night at -6 e -10°C to have the iced water in the grapes and so with a major sugar concentration.

How was the 2013 grape harvest?
It was tardive. It was a very fresh year which is ideal for the classical method of the sparkling process. The third of October we started the grape harvest and the 10th it was snowing and we still had to pick the 50% of the grapes.
Which are the future projects for your cellar?
We want to increase the production of the classical method. We want to continue with the high-flying production, with the wine making without sulphites and we want to safeguard the biodiversity with the appreciation and the graft of an experimental field of ROUSSIN DE MORGEX which is another local variety of red berries.
In your opinion, how much is important the improvement of the quality of the wines you produce?
It is the main aspect of every manufacturing and every change carried out. The quality of the product is necessary to increase the knowledge and the awareness about the unicity of the Prié Blanc.
If you have to convince a customer to buy your wine, what would you say to him?
We have a very local variety which is cultivated in only two places in Aosta Valley and in none other part of the world. In the highest vineyards in Europe at the feet of the Monte Bianco. Unique, rare and extreme products.
Which is your favorite thing of your work?
The think I like the most is the wine making, I love following the refinement process and all those parts which are very technical.
If the Prime Minister would call you and he would ask you a wine for a very important dinner, which wine would you suggest him, and why?
I would suggest him a vin blanc EXTRABRUT 2011, because the year has enhanced the product. With a pas dosé disgorging it is the best expression of the integrity of the terroir du mont blanc.
I would suggest him to match it with some crustaceous (lobsters).
If you have to give an advice to all the cellars of your territory, what would you advice?
We have to create a system like in Switzerland. The Aosta Valle mainly earns from the tourism, and the gastronomic wine tourism is increasing a lot in the restaurant and wine bars so the Aosta Valley wines have to be almost the only ones you could find.
In the last years the web commerce is expanding a lot, the online wine shops are growing up more and more; how do you consider this market news?
A great possibility. We live in a hurry society so having easy ways to access to the products is perfect. Even if the wines need a more direct approach which give them an additional value.

Which is the wine you would suggest to the online Uritalianwines customers and why?
I suggest to all of you to taste the Piagne 2013 and the cave du vin blanc Extra Brut 2011. Qualitatively, they respect my own favorite tastes. Net, correct, and very pleasant. The good wine has to attract the second glass.
