Descrizione vino

“Ognissanti” is the cru of the Novare estate and took its name by an old little church located in the middle of the homonym vineyard and it belonged to the Saint Thomas friars. It is a Valpolicella Classico Superiore very complex and full and it is made by Corvina Veronese 80% and Rondinella 20% grapes. The grapes are cultivated with the trellised and Guyot method with a density of 5000 trees per hectare. The production is located at south with a pebbly-calcareous soil. The harvest takes place in the second half of October and it needs a long wine making process with a fermentation at 20°C. The maturation and aging last 18 months in French oak barrels. It follows the bottle aging for 6 months.

 

Characteristics of the Valpolicella Classico Superiore “Ognissanti” DOC

It has an intense red color with garnet reflections. The smell has red fruits, cherry, black cherry and eucalypt aromas. The taste is wide, encharming and soft with sweet aromas of dry prunes and cherry.

 

Suggested pairings with this Bertani wine

It is perfect with intense and elaborated courses with velvety aromas. It is perfect with braised meats, roasted meats, game and aged cheeses. It has a proof of 13.5% and it has to be served at 18°C in Ballon wine glasses.
