For the production of this wonderful Valdobbiadene Superiore DOCG prosecco Rive di Refrontolo Brut the wine company Santa Margherita put the cuvee in autoclave to re-ferment at 13°C. The low temperature is kept to preserve the aromatic potential of the basic wine. In around one month it achieves the desired conditions of over-pressure and sugars, and so it remains in autoclave on yeasts for about three months before being bottled. The production is made by Glera grapes coming from the DOCG Refrontolo area in the Mire hamlet in the Treviso province. The soils are located at 200-250 meters above the sea level and they have moraine origins with a good friability and clay presence. The cultivation method is the typical of the Valdobbiadene which is the Sylvoz one. The density is 4000 trees per hectare.
Characteristics of the Valdobbiadene Prosecco Superiore Rive di Refrontolo Brut DOCG
This DOCG prosecco has a bright straw yellow color with green reflections. It has some peach flowers and acacia aromas together with white pulp fruits, renetta apple and peach fragrances. On the palate it is fresh and tonic, shining and enveloping, with an extremely thin perlage which prolongs on the palate the smell aromas.

The Valdobbiadene Superiore DOCG prosecco Rive di Refrontolo Brut is a perfect appetizer wine which is perfect with tasty starters, but also with prestigious crustacean and fishes. It has to be served at 8°C in high and tapered wine glasses to concentrate the aromas to the nose.
