Descrizione vino

The Tancredi wine of the Donnafugata cellar is an important red wine very elegant and with a large bouquet where the licorice, the cacao and black cherry are the marked aromas with a hint of mentholated flavor. The grapes, cultivated in the Marsala hinterland , on the Contessa Entellina hills, arrive to the cellar divided by working areas depending on the type of grape. Already from the outside, the cellar is divided in two areas: black berries and white berries. The grapes, as soon as they arrive, are destemmed and pressed: the pressed part is cooled down through a heat exchanger and lately starts the second part of the winemaking process. All these processes are the mechanical reproduction of the work the farmers used to do.

 

Characteristics of the Tancredi IGT wine

The red wine Tancredi is absolutely perfect for relaxing moments, it is an ideal partner while you are reading a book or listening to some music. It is also perfect is formal working lunches. The proof of this amazing wine reaches the 13,5 – 14 degrees. It is produced with Cabernet Sauvignon and Nero d’Avola grapes but it is blended also with the Tannat grapes and other local vines.  For these vines is used the counter cultivation method and it is used the cordon spur pruning. The whole cultivation density is 5000 vine stocks per hectare and the production is low about 50 q. per hectare. The cultivation ground is mostly clay and relatively loose with lots of mineral salts. The grapes are picked in September and  the grapes are worked in steel tanks with a maceration on the peels for about 12 days at a temperature between the 26° and the 30° degrees. It follows a natural malolactic fermentation and the wine has to refined for 12 – 14  months in second generation French oak barrels . Finally there is a refinement in bottles for at least 18 months.

 

Suggested matches with this red wine from Sicily

It has a wide and charming structure, very persistent and it can be matched with red meats, roasted meats such as lamb and kid. It has to be tried with porcini and aged cheeses. The blend with the Cabernet Sauvignon gives great refinement and longevity with important and velvety tannins while the Nero d’Avola gives its cherry and black cherry typical aroma with a persistent spicy flavor. The Tannat reinforces the fruity component and give a polyphenol structure rich of noble tannins: a spectacular vine for long refinements. It has to be served at 18°C.
