Frassineto DOC Brut Villa Tavernago
The Frassineto DOC Brut Rosé is an organic sparkling wine produced with the classic method 30 months of the Emilia Romagna region. The grapes used come from vineyards owned by the Winery Villa Tavernago and are Pinot Nero and Chardonnay, that vary percentages depending on the vintage. The grapes are selected and harvested by hand in wooden boxes. The two musts are fermented separately in stainless steel tanks at a controlled temperature, vinified in white, with Pinot Ner left to macerate on the skins for a very short time . At the end of fermentation you create a cuvè with the assemblage of wines. In spring are added cane sugar and selected yeasts, the wine will then bottled where take place the second fermentation. After a rest period that varies from 24 to 30 months, take place the "disgorgement", adding the "liqueur d' espedition" and closing again the bottle with a cork.
The wine color is pale pink with fine and persistent. The aroma is of bread crust and vanilla, typical scent of the traditional method. To the palate is bubbling, the initial acidity is balanced by a hint of sweet taste
Serve in a flute at a temperature of 6°- 8°C. Excellent as an aperitif and perfect with seafood entrees, especially raw fish ( sushi and carpaccio ), grilled fish and it also great with meats and pasta dishes with meat and mushrooms.
