“Operé Trevigiane Serenissima DOC” was presented by Villa Sandi in Vinitaly 2015. It is the first “Metodo Classico” sparkling wine produced following the rules of the new DOC Serenissima, created in 2011. It has the denomination “Vino Spumante di Qualità Metodo Classico Brut Serenissima DOC”. It is a blend composed by Pinot Noir and Chardonnay, cultivated in the area called “Serenissima”, located between the Alps and the Po valley. The vineyards are planted around the estate of Crocetta del Montello.
Feature of the sparkling wine “Operé Serenissima DOC”
The organoleptic analysis reveals a shiny straw yellow colour with a faint and persistent perlage and a white, consistent foam. Its perfume recalls mature white fruits, surrounded by sensation of flowers, bread and yeast. The taste is dry, fresh and soft, with a great final.

It should be served in a high, tapered wine glass. It represents the perfect solution for classy happy hours, for this reason, it is fabulous with appetizers with salmon and light vegetable cream.
