Spumante Extra Brut “LE FARE” Merotto
The aptitude to produce wines by passion, brings the Merotto winery, rich in tradition and professionalism as well as innovation to produce this Extra Brut Sparkling Wine called Le Fare. A sparkling wine of great texture, dedicated to all lovers of a strong and persuasive wine. It comes from the piedmont production area of the province of Treviso, produced with the purity of Glera grapes following the traditional method. The vinification in white with pellicular maceration, involves the soft pressing and a fermentation in purity at a controlled temperature. The foaming takes place naturally in an autoclave for about 40 days at a temperature of 13° maximum 14°C. Subsequently the resting on its own yeasts takes place for about three months, an activity capable of reinforcing the structure of the wine and the character. The process determines a sparkling wine with an alcohol content of 11.5 percent volumes, a residual sugar of 4 grams per liter and a pressure of 5 bar at a temperature of 20°C.

The organoleptic examination returns the description of an exceptional wine, full of scents and great body, able to trace the characteristics of the local tradition, enhancing them. The visual examination returns an aspect of bright straw-yellow color elegant and intense, compact and soft foam, fine and persistent perlage. The scent is intense and inviting, full of sensations of white and tropical berries, blending with hints of wisteria and acacia flowers. The taste is soaked and the scent berries reveal dry and sapid, the taste is tense and gritty in almost total absence of residual sugars closes long on citrusy tones. Finally, the aftertaste is satisfying with clear returns of fruity notes.
