Frassineto Brut DOC its an organic spumante (sparkling) of Emilia Romania region, produced by following the classical process “30 days”. Grapes are Pinot Nero and Chardonnay (percentage changes depending on the year). They are picked by hand, selected and placed in wooden boxes. Both musts ferment separately in stainless steel vessels at a controlled temperature. After fermentation the two wines are mixed together to create a cuvé (or blend). The wine obtained by this process rests for 24-30 months, then the degorging process follows and the “liqueur d’expédition” is added. Finally the wine is corked.
Characteristics of Spumante Brut Organic
It presents a straw yellow colour with golden reflections and a persistent and subtle perlage. Bouquet merges a crust of bread fragrance with a note of vanilla, that is typical of the classic method. Bubbling on the mouth with a balanced taste, thanks to the opening acid note and a proper sweetish hint.
Recommended pairings with this Sparkling wine Brut "Il Frassineto"
It is an excellent aperitif and it can be paired with fish appetizers, like sliced raw fish and sishi. It should be served in a flute at a temperature of 6°-8°C.
