The red Sicilian wine Sedàra born in the Marsala hills, in the oldest cellar of the Donnafugata familiar company. It is a fresh and pleasant wine, with a good structure, persistence and intense red fruits scent in addition to floral aromas and a spicy end.
Characteristics of the Sedara DOC wine
The Red wine Sedàra of the Donnafugata cellar is perfect in everyday life, but we suggest it also for convivial occasions such as a party or a barbecue. This wine has the DOC certification and it is produced with the Nero d’Avola grapes with some minor percentages of other local vines. The proof is between the 13 and the 14 degrees. For this vines is used the counter cultivation method and it is used the cordon spur pruning. The whole cultivation density is 5000 vine stocks per hectare and the production is about 85 q. per hectare. The cultivation ground is mostly clay and relatively loose. The grapes are worked in steel tanks with a maceration on the peels for about 10 days at a temperature between the 25° and the 28° degrees. It follows a natural malolactic fermentation and the wine has to refined for 9 months in cement tanks. Finally there is a refinement in bottles for at least 6 months. The product is a red, fresh and pleasant wine with a fragrant bouquet and an intense red fruit aroma, such as cherry and also floral flavors of rose. Its taste is in a perfect harmony with the scent but juiced up by a spicy and fresh acidity aromas.
Suggested matches with this red sicilian wine
The best matches with this wine are with meat sauces, lasagna and red meats. It has to be tried with browned tuna. It is very good also with tuna with corn meal mush and with cannelloni with saffron filled with foie gras. It is also suggested the match with local courses such as the "Farsu magru" which is a traditional meat roll with eggs, ham, caciocavallo and aromatic herbs. It has to be served in a little or medium Bordeaux wine glass at 16°C.
