Salento Rosso "Don Vito" Mediterranea
The Mediterranea company produces this great IGP wine capable to give important and fascinating emotions. This wine is produced with Negroamaro and Primitivo grapes which are typical vines of the Salento area in Puglia. The soils are mostly calcareous of Carsick origins rich of minerals, steel and oxygen typical of the Salento area. The annual production is 100 quintals per hectare. The proof is 14,5%, the acidity is 5,7 grams per liter and the natural sulfur dioxide don’t pass the 100 milligrams per liter.
Characteristics of the Salento Rosso IGP "Don Vito" wine
The grapes after the pressing pass through a maceration period of 15-20 days. It follows a draining and soft pressing process and only the first pressing must has to ferment with selected ferments. This process takes place in stainless steel tanks under temperature control kept at 22°C. Finally the wine is centrifuged to eliminate the residual parts. The aging takes place in wood barrels for 6 months. It has an intense ruby red color. The scent has marked nuts aromas with lower perfumes of red fruits. The taste is soft, velvety, rich, sapid and full. It is also round, with character.
Suggested pairings with this red wine from Puglia
The local tradition want the match with roasted spicy meats or with very flavored and tasty courses. It has to be served at 18°C in Ballon wine glasses.
