It is produced with the youngest vines of the Salcheto Company of mostly Montepulciano grapes and it rips only in steel. The Rosso di Montepulciano DOC red wine of the Salcheto cellar has the DOC certification and its production follows the biological production methods. It is firstly produced in 1992 and it is used the Toscanella bottle of 750 ml to follow the ancient tradition.
Characteristics of this red wine from Tuscany
The Rosso di Montepulciano DOC red wine is produced with Sangiovese grapes for a 85%. There are added a 8% of Canaiolo and a 7% of Merlot. All the grapes are cultivated in the Salcheto estate company vineyards in Montepulciano in 5 hectares of territory extension. Every year there are produced 26000 bottles and it is refined for 4 months in stainless steel tanks. The following refinement takes place in little glass bottles to guarantee the elimination of all the volatile elements for, at least, 3 months. The maturation lasts 3, maximum 5 years. The Rosso di Montepulciano DOC red wine has a proof of 13,5 degrees and it has a cold maceration. The general Ph. is quite high at 6,41 points. The concentration of polyphenol is high and it reaches the 3854 units.

The Rosso di Montepulciano DOC red wine is perfect with tasty and structured meats, and it is also good with sauces and vegetables. It can be matched with fried vegetables, with fried meat joined by vegetables flavored with oil, spices and also a bit spicy. It needs a settling time of 30 minutes and it has to be served at 18°-20°C. The ideal wine glass is the Ballon or the Bordeaux because with their wideness helps the fruity scent to emerge.
