Recioto della Valpolicella Classico DOCG DOMINI VENETI
This elegant blend is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% other grapes. The vineyards are located in the traditional area of Valpolicella, on the hills of Negrar. The harvest is planned in the last week of September and it is managed manually. The wine making considers a drying process that lasts 100/120 days. In January the stalks are eliminated and the pressing starts. The fermentation temperature is set on 12-23°C and the maceration lasts 20 days. The malolactic fermentation is followed by the aging in steel, that lasts 6 months. Natural stabilization after 4 months maturation in the bottle.
Features of the wine
Intense ruby red colour enriched by perfumes that recall cherry, dark cherry, and plum. Its taste is creamy and recalls dried fruits.
Recommended food pairings
Excellent with sweets and chocolate. The pairing with mouldy or spicy cheeses is very interesting. It has to be served at 10°C. 12,5% Vol.
