Pinot Nero "MIMUÈT" BIO
In the original language of Trentino Alto Adige, “mimuèt” means “according to my style”. As convinced as we are that Alto Adige offers the best condition for the cultivation of Pinot Nero, we dedicate our passion to this vine variety. Our intent is to create wines with a particular profile, characterized by lightness and a refined structure. To obtain this result, we assembly grapes coming from different vineyards, all located, anyway, in fresh zones. We choose with care the moment of the harvest, planned when the grapes are still crunchy and have a lively taste in order to produce a Pinot Nero with important freshness and sourness. Schiava grapes of small and medium size are joined to Lagrein for the wine making. Pinot Noir Riserva Mimuèt is produced with grapes coming from the fresh zones of Missiano, near Appiano, and Pochi, near Salorno. This red wine ages part in steel and part in barrique, for a period that lasts about 12 months. It is a refined product, able to astonish for its features and longevity.
Features of Pinot Noir Riserva Mimuèt
The organoleptic exam expresses a garnet red colour of medium intensity with ruby reflections. The perfume recalls with delicacy fruits, black cherries, spices and a balanced minerality. The taste is strong, but with a round structure, a fresh final and a great persistence.

This wine could be drunk in any meal. It is great with white meats, poultry, baked game, delicate cheeses. It has to be served at least at 16°C in a high, wide wineglass that allows the diffusion of the perfumes. It reaches an alcoholic strength of 12,5% Vol.
