Wine Description
The Passito di Pantelleria Liquoroso DOP from the Sicilian Florio winery is made with pure Zibibbo grapes, grown on soils of volcanic origin. After the manual harvest in the last weeks of September, with grapes harvested in over-ripening, part of the grapes are left to dry in the sun for a period of 20 days: the grapes concentrated by the sun are added to the fresh must and together they are subjected to fermentation until to reach an alcoholic strength of 5%; the wine distillate is then added to stop fermentation and the maturation phase begins, during which the wine rests in concrete tanks for about five months.
Characteristics of this Sicilian wine
Upon organoleptic examination this liqueur wine shows a luminous golden yellow color; the nose is intense with notes of ripe yellow fruit and hints of vanilla, on the palate it is a soft and full wine.
Suggested food pairings while tasting this Sicilian wine
Excellent with dry pastries, fruit and ice cream. To be served at a temperature of 14-16 ° C in a tulip glass.
