Moscato di Pantelleria "Kabir" DOP Donnafugata
The peculiar White Sweet wine produced by the Donnafugata cellar is a Muscat from Pantelleria with citrons fragrances in addition to floral ones. It is fresh, light and complex. Its peculiarity is the heroic cultivation of the vines that takes place in the Pantelleria Island where thanks to the sea, the ambient is rich of wind and mineral salts which permits to have very prestigious Zibibbo grapes. The cultivation territories are positioned in 11 different areas.
Characteristics of the Moscato "Kabir" wine
This white wine of the Donnafugata cellar is extremely pleasant, not very alcoholic and it is a perfect dessert wine for parties with friends. It is perfect also used as appetizer to be tasted during the summer. Its sweetness correctly balanced with the freshness make this wine perfect to be eaten with sapid cheeses such as caprino, but also fruit pies, ice-cream and fruit salad. It has to be tasted also with the fish eggs and fume fishes. The proof is between the 11,5 and the 12,5 degrees. It is produced with 100% Zibibbo grapes. The vines are cultivated with the tree local method which is typical of the dry and karstic Mediterranean cultivation. The very ripen grapes with a unique gold color are picked in the first decade of September and then are softly presses and macerate in steel tanks. The must ferment under temperature control. Finally there are 4 months of bottle refinement. The wine produced is elegant and balanced and it represents an excellent interpretation of the Zibibbo with a net and balanced harmony. It has some splendid melon and orange peel aromas in addition to a rose and honey taste for a great satisfaction. It is moderately sweet, fresh and sapid with a controlled alcoholic structure.

It is perfect with sapid cheeses, white pulp pies, salad fruits and bakery with citrons peels. It has to be tried also with fish eggs and fume fishes as for example the spaghettoni with fish eggs or the baked sword fish with aromatic herbs. It has to be served at 10°-12° C in medium large tulip wine glasses with a light projection outwards of the upper side.
