Morellino di Scansano DOCG BIO
From the wise vinification of precious grapes blended in a blend composed of 85% Sangiovese, 15% other vines such as Ciliegiolo, Colorino, Alicante, Syrah. The origin of all the vineyards falls within the corporate scope of the Maremma. The harvest begins with the harvest immediately after the first decade of September, and lasts until the first week of October to allow the grapes to reach the right degree of ripeness. Vinification takes place using traditional methods, in modern cement tanks and small conical wood truncated tinels, native yeasts (pied de cuve), prolonged maceration times on the skins (15-20 days) at controlled temperatures of 27-29°C. The extraction of polyphenols is obtained by frequent alternating pumping over to délestages with only manual interventions. All the vineyards are bred with the criterion of high plant density (about 6500 vines/ha), the prevailing form of breeding is the double Guyot with some sapling plots. All the wine is passed in wood for 12 months in small barrels (25 hl) and tonneaux of the first and second passage.

On organoleptic examination, the wine appears to have an intense and deep ruby red color. The perfume is characterized by primary aromas of ripe fruit that are integrated with secondary perceptions of spicy tone, discreet the complement of woody note. The taste on the palate shows breadth, shoulder and roundness given by the docility of tannins, in the mouth is clear thanks to a sustained acidity.
