Merlot Baltasar IGT Terre Siciliane is a red Sicilian wine, produced by the Assuli company located in the Trapani countryside in Mazzara del Vallo. The name Baltasar together with Melchiorre and Gaspare remember, since the Crusade, those three who embed the emblem of ancient tradition of the Assuli family. This wine grapes is 100% Merlot picked at the end of August. The maceration of the peel takes between 10 and 15 days, follows 10-12 months in French oak half toasted barrels.

 

Characteristics of the Merlot "Baltasar" IGP wine

Esthetically it has a deep ruby red colour. The scent is delicated with some cherry, black cherry, lead and aromatic erbs flavors combiened to a floreal and spicy touch. The taste is soft and sapid, balanced and nicely tannin.

 

Suggestions for the Merlot IGP wine

It has to be served in large globets at 17-18° C It is perfect to be eaten with second courses of game such as roasted duck.
