Gewurztraminer Passito "CASHMERE " DOC Elena Walch
A sensational and unusual blend composed by 95% Gewürztraminer and 5% Sauvignon. The grapes of this refined article produced by Elena Walch are harvested at the end of September. The bunches are placed on trellis in a room with a good ventilation where the fruits dry out for 4 months. This process causes a weight loss of 2/3, that means that sugar, aromas, sourness and tannins become more concentrated. After a slow fermentation of 6 weeks, the wine making process considers a year aging on lees, in steel and a further period of maturation in the bottle. The quantity of sugar is so high, that the yeasts aren’t able to complete the fermentation and the wine remains naturally sweet.

This wine shows a yellow colour with amber shades. Its perfume is unique and intense, with hints of dried apricot, candied fruits, rose petals, oranges and caramel. The taste is complex, harmonious, enchanting, sweet, balanced and sour. Long lasting persistence.

Perfect at the end of the meals. It goes on well with sweets, foie gras, mouldy cheeses. It has to be served at 14°C in a small wine glass that concentrate the perfumes. The alcoholic strength reaches 14,5% Vol.
