Etna Bianco "Monte Gorna" DOC NICOSIA
The riserva Etna Bianco DOC of the Nicosia winery is expresses in this white wine that needs a long aging period and it is made with the best grapes of the Monte Gorna vineyard with the prevalence of Carricante grapes located in the south-east of the volcanic slope. The low profit, the manual picking and the careful selection of the grapes give life to an elegant wine with its typical mineral taste. It takes four years of maturation in the cellar with a passage of 12 months in French oak barrels that contributes to the taste of this wine. The blend is made of Carricante 80% and Catarratto 20%. The cultivation soil is sandy-volcanic and they are located at 700-750 meters above the sea level. The cultivation method is the trellised with the cordon spur pruning. It takes place a manual picking in the second half of October. The cold maceration lasts 24 hours and the fermentation lasts 3 weeks at 22°C. The refinement occurs in steel on fine lees with several bâtonnage, 12 months in French oak barrels and another year in bottle.

It has a golden bright color. The smell is complex, elegant with chamomilla and broom flower aromas mixed with pear, apple, pastry cream and honey. The taste is soft and elegant, harmonic, sustained, sapid, mineral and a light acid hint.
Suggested pairings with this great Sicilian wine
This wine is perfect both with crustacean and other fat fishes or with roasted game. TI is good also with soft cheeses. It must be served fresh at 14°C in a high a wide wine glass. The proof is 13%.
