Coda di Volpe is the most representative wine of the winery and it has the denominatin IGT. It is produced with 100% Coda di Volpe, a rare variety that express its best only in this area. The vineyards are cultivated in Ponte, near Avellino, on soils full of clay exposed on south-west, in order to benefit from the sun rays. 300 meters above the sea level, Guyot training method. The cultivation has 5000 stumps per hectare and develops 80 quiltals production. The plants there are maximum 10 years old. The aging starts in the third week of september. It is followed by soft pressing and fermentation in steel at controlled temperature. The aging in the bottle last 5 weeks.
Features of “Bianco Coda di Volpe”
Straw yellow colour. The perfume is fresh and floral and recalls fresh fruits. The taste reflects the scent and adds minerality.
