Champagne "Vintage" Rosé Brut in Box Pol Roger
“Pol Roger Rosé Vintage” is based on our Brut Vintage. It is a blend composed by 60% Pinot Noir, 40% Chardonnay and a little percentage of the plain Pinot Noir (red) coming from the best crus of the mountains of Reims. The last variety is added just before the bottling and the re-fermentation. It is produced in limited quantity. “Brut Rosé Vintage” ages for at least 7 years in the cellar. The stabilisation of the must (débourbage) is managed in two steps: once after harvest and soft pressing, and then a second time in steel containers, “a froid” (6°C), for 24 hours. The slow alcoholic fermentation is developed in steel containers at 18°C. Each variety is worked separately till the assembly. After a complete malolactic fermentation, the wine is then assembled. The second fermentation takes place in the bottle at 9°C. This process is managed in the cellars of the Maison, located 33 meters underground. Manual “remuage” that is becoming more and more rare in the region of Champagne nowadays.
