This one is our most important red wine, produced since more than 100 years. In the winery of Barbi farm you can admire a collection of thousands bottles of Brunello, starting from the harvest 1892. Its fermentation in steel containers lasts about 14 days at 28°C, followed by two years aging in Slavonia barrels and a further maturation in bottle of 4 months. It is composed 100% by Sangiovese. During the wine-making, the soft pressed grapes are cooled at 16°C in a space without CO2. This cooling-process is useful to extract from the peels polyphenols and anthocyanins. The classic alcoholic fermentation follows with its 16/17 days at a controlled temperature of 27°C. After the malolactic fermentation the product is introduced in little containers (2.25-15 hl) and then poured in bigger ones. The prestigious Brunello rests in barrels for at least two years and ages in the bottle for minimum 4 months.
Features of Brunello di Montalcino DOCG
Ruby red colour with garnet reflections. The perfume is rich of red fruits, cherry, some citrus fruits hints, candied fruit. The taste is structured, balanced, persistent, elegant and rich, characterized by red fruits, cherry and plum.

It is a wine suitable for savoury dishes, like red meat or game, cooked in different ways. It can be matched with aged cheeses as it could reach also 15 years aging. For the conservation it is suggested to place the bottle horizontally in a space where the temperature doesn’t exceed 12°C. It has to be served at 18°C in a wide wine glass and the alcoholic strength is 14,5% Vol.
