The white wine Brianello IGT Marche is produced with Sauvignon Blanc grapes and Tuscany Trebbiano blended respectively for a 80% and a 20%. The production territories which are located in the east level of Tolentino in the Marche are characterized by alluvial grounds rich of calcareous with a medium deep structure. The vines are cultivated at 130 meters above the sea level. The vines are cultivated by following the Guyot method and the harvest is from the third week of August for the Sauvignon Blanc whereas the Tuscany Trebbiano has to be picked the second week of September. The fermentation takes place after a short maceration under temperature control stable at 8°C.
After there is a soft pressing and so it takes place the division of the must called “Flower” (main). It follows the alcoholic fermentation under temperature control at 15°C. The final fermentation takes place in vitrified cementer tanks. The maturation of the wine takes place in special cementer tanks with thin sides and periodically it is done the Batonnagge of the returned berries. The refinement lasts about 3 months.
The maximum aging period for this fantastic white wine is 5 years.
Characteristics of this wine
It is marked for a strong character enriched by floral and fruity flavors with white pulp. It is fresh, equilibrated and full.
It is suggested the match with sapid fresh courses. Roasted green fish and crustaceous. It is wonderful with octopus with pee, olive, capers and tomato sauce. The sapid and structure flavor of this wine can exalts the strong flavor of the olives and capers immersed in the sauce.
