Wine Characteristics
Descrizione vino
From the vinification in purity of 100% pure Barbera grapes the Piedmontese Borgogno winery produces this fascinating Barbera Superiore wine. The origin is the classic one of the Langhe in the city of Alba. The harvest takes place from 15 to 30 September and immediately follows the vinification. For the vinification we proceed with the fermentation that follows the method of the Borgogno winery. It differs from normal Barbera, not only for its alcohol content, but also for a different production concept. In fact, Barbera Superiore is a selection of the greatest Barbera grapes. Fermentation takes place for about 15 days at low temperatures of 24 - 28ºC, after light pressing and aging in large Slavonian oak barrels for 10 months, at a natural temperature of 18 ºC. Finally an aging of about 3 months in the bottle. This classic procedure allows the maintenance of acid freshness and spice fragrance, in a wine to drink, fragrant, typical and elegant.
Characteristics of this Barbera Superiore
This wine has a dark ruby red colour. The perfume on the nose expresses beautiful notes reminiscent of leather, licorice, coffee, cherry and blackberry. The taste on the palate is full, rich, satisfying, supported by a certain acidity before a finish of impeccable persistence on the fruit.
Suggested food pairings while tasting this wine from the Borgogno winery
For the whole meal, it goes well with first courses full of flavor, meat dishes and fresh, medium or long-aged cheeses. The serving temperature is 16 ° C in a large glass that allows the wine to oxygenate well.
